The Homemade Diet Plan: Fresh Quinoa Salsa

When I discovered you could actually grate a tomato, there was no stopping me!

I came up with this yummy, quick lunchtime (or anytime) meal.

Fresh Quinoa Salsa

  • Five or six Roma Tomatoes grated
  • 1 cup of cooked quinoa
  • 1/2 cup of roughly chopped Arugula lettuce
  • 1/4 cup of roughly chopped Cilantro
  • 1/2 cup of diced red onions
  • 1/2 cup of diced cucumber
  • 1/2 avocado chopped
  • 1/4  to 1/2 cup of cubed cheese of your choice. (I used Gouda cheese)
  • 3 Tablespoons to 1/8th of a cup of Extra Virgin Olive Oil
  • 1/4th of a cup of raw apple cider vinegar
  • 2 teaspoons of Pink Himalayan Salt
  • A sprinkle of pepper to taste.
  • 2 cloves of garlic - finely shredded.
  • 1 teaspoon of  unrefined cane sugar (Not beet sugar, replace with other natural sweetener if desired such as coconut sugar, maple sugar, etc.)
Directions
Prepare the quinoa as directed on the package. Set aside to cool. Prepare the rest of the ingredients as directed above. You can grate the tomatoes in a bowl with a a cheese grater. Simply slice the tomatoes in half and grate the cut side of the tomato against the largest grater. Grate the tomato until the skin is left. 

Right after you grate the tomato, with the same grater, finely shred two garlic cloves. Add the rest of the ingredients and mix thoroughly.

Adjust the ingredients to your taste and eat by itself or with non-GMO tortilla chips.

Quality, Quality, Quality

I can't stress this enough. Choose unrefined, preservative free foods as much as possible. If you can't go organic, choose raw, non-GMO produce whenever possible and choose unrefined salt, sugar, and oils. And for the love of all that is holy - stay away from margarine! The best for your body means going back to the basics and making plant-based foods the majority of your diet, get your proteins mostly from grains and plants and eat clean meat a few times a week.
