It's a good source of vitamins C,K, E, B6.  It also has a higher count of potassium than bananas and holds folate, beta-carotene, magnesium, niacin, riboflavin and omega-3s, specifically ALA which helps the body make DHA - very important for pregnant and nursing moms like me!

I've been loving on and playing around with avocados lately and have made some fun food discoveries. Avocados can be substituted for butter in some desert recipes, such as brownies because of their high fat content. You can use it as a thickener. It's flavor is bland enough to go savory or sweet! Use a tablespoon in your smoothie to make it creamier!

Avocado pancakes is a healthy cost saver, easy to make and nutritious to boot.

Avocado Pancakes

Avocado Pancakes Sprinkled with Powered Sugar

Ingredients
One small avocado or 1/2 a large avocado
2 eggs
Salt to taste
1/2 tsp. of sugar

Yields - 6 to 12 pancakes

Directions

Avocado Pancake Mix
Puree the avocado in your food processor. Add the eggs and puree some more on high. Add the rest of the ingredients. Proceed to cook the pancakes on a griddle just as you would regular pancakes. Handle them with care. They can be delicate when flipping over.

Drizzle with maple syrup and add a pat of butter. My family just adds powered sugar with coconut oil - yum!

If you don't have a food processor, simply mash the avocado, add the eggs and beat with a beater on high, until smooth and then add the rest of the ingredients.

1 Tablespoon of cocoa powder
3 Tablespoons of Sweetener  - I used raw cane sugar

Oatmeal Avocado Pancakes

Oatmeal Avocado Pancakes

This was a hit with my family. Everyone was begging for more!

Pre-Instructions
I used soaked oatmeal in this recipe for digestibility. Read more about the benefits of pre-soaking in my Raw Cashew Milk recipe.

Soak a cup of oatmeal in hot water and set aside for twenty minutes. Drain the oatmeal through a colander as much as possible and rinse a few more times.

Ingredients
One small avocado or 1/2 a large avocado
3 eggs
1/2 c. of coconut milk
Salt to taste
1/2 Tablespoon of sweetener 
1 cup of soaked oats - rinsed.

Directions
Mash the avocado. Add the eggs and beat with a beater on high, until smooth. Add the rest of the ingredients and mix thoroughly. If the consistency is thick, add more coconut milk and stir. Top with maple syrup and butter - whatever you please!

1 tablespoon of cocoa powder
3 tablespoon of Sweetener
A pinch of pink salt
1/2 tsp. of Vanilla extract
